Our First Cupid's Favorite Dark Chocolate Mousse (a la Wayne Norman) or Mousse with a Kick from the 2008 Romantic Willimantic Chocolate Festival cookbook:
3 1/2 ounces dark chocolate, melted
1 1/4 cups plain yogurt
2/3 cup cream cheese
4 Tablespoons sugar
1 Tablespoon orange juice
1 Tablespoon brandy
1 1/2 teaspoons unflavored gelatin
9 Tablespoons cold water
2 large egg whites
dash of nutmeg (in honor of the Nutmeg State, Connecticut, of course!)
coarsely grated dark and white chocolate and orange zest, to decorate
1. Put first 6 ingredients in food processor and process for 30 seconds. Transfer mixture to large bowl.
2. Sprinkle the unflavored gelatin over the water and stir until completely dissolved.
3. In a small pan, bring the gelatin and water to boil for 2 minutes. Set aside to cool slightly, then stir into the chocolate mixture.
4. Whisk the egg whites until stiff peaks form, then fold them into the chocolate mixture using a metal spoon.
5. Line a 4-cup loaf pan with plastic wrap. Spoon the mousse into it. Chill for 2 hours in the refrigerator, till set. Turn the mousse out onto the serving plate and decorate with chocolate and orange zest. Serve proudly.
